In cities, families with incomes of $3,000 or over consumed more than one and one-half times as much fish as families with less than $500. However, the increase of consumption of meat and poultry was greater than the increase of the consumption of fish.
Consumption studies generally are made on the so-called "disappearance" method, where by average consumption data are derived from statistics of production, imports, exports, and stocks on hand at the beginning and end of the period of time in question. In this study, actual consumption data were obtained from families representative of various population groups and put together with suitable weighting to give average figures for the country as a whole.
